Søren Westh is a Danish food entrepreneur and chef. Over 10 years ago he set out to try and change the way we look and interpret food. He walked through the Danish woods, digging up what seemed edible, and cooked up new inspiring dishes. And yes, sometimes he did stumble upon a herp or root nonedible (at least not for humans), got a involoutary 24-hour detox. But that’s just part of the game and the purpose. For him, his goal is to help us realize how we can change our edible future and make it better.
Søren Westh used to work for a little restaurant called Noma – as we speak, 3rd best in the world – but chose to move on by himself. He’s installed in a small houseboat in Copenhagen, Denmark; when he’s not out discovering, that is. This house boat IS the Nordic Food Lab. A non-profit self-governed institution, which the world has not seen enough of.
